What’s the Story Behind Falmouth’s Oysters?
For generations, the waters around Falmouth have been shaped by the rhythm of the tide, the changing wind and the work of the local oystermen. For more than a century, Cornish families have made their living from oyster dredging across the Carrick Roads and surrounding rivers, creating a tradition that remains at the heart of Falmouth’s maritime identity.
Many of the boats used for oyster fishing are traditional Falmouth Working Boats, built in boatyards around the Fal. Some date back to the 1860s, while around 100 years ago more than 130 oyster dredgers worked from Falmouth and St Mawes.
Today, that heritage is still very much alive.
There’s something special about seeing these boats under sail, moving quietly across the river as they have done for generations. It’s a glimpse into a side of Cornwall that feels wonderfully connected to the sea.
A Celebration of Falmouth’s Oyster Season
Every autumn, this heritage takes centre stage at the Falmouth Oyster Festival.
Running for almost 30 years, the festival marks the beginning of the native oyster season, which traditionally runs from October through to March. For four days, Falmouth comes alive with the flavours, characters and traditions of the sea, bringing together seafood lovers, foodies and those simply looking to experience something distinctly Cornish.
There’s the taste of freshly prepared oysters, the buzz of the harbour, the sound of live music and plenty of Cornish food and drink to discover. It’s the kind of weekend where you can spend the morning exploring Falmouth’s waterfront, pause for something delicious, then wander through the festival as the town settles into its annual celebration of the sea.
